Whether you’re looking for a guilt-free treat or a healthy snack for the kids, this easy recipe fits the bill. The bars are sweetened with fruit and dark chocolate so you can feel good about what you are eating. I bake and freeze a batch every week making them a perfect on-the-go snack for my busy boys.
BANANA OAT BARS
- 2 bananas
- 2 dates
- ¼ cup nut butter of your choice (my favorite is almond butter)
- ¼ cup melted coconut oil
- 1 tsp vanilla
- 2 cups gluten-free oats
- ½ cup unsweetened coconut
- ¼ cup hemp seeds
- ¼ cup dark chocolate chips (tip: the higher the cocoa content, the lower the sugar content)
Preheat the oven to 350 degrees. Blend the first 5 ingredients in a blender or food processor. Transfer to a bowl, add the remaining ingredients and stir. Spread the mixture into an 8” x 8” glass baking dish lined with parchment paper. Bake for 25 minutes or until the center is firm and the sides are browning. Cool then cut into bars or squares. Makes 16 bars.
