RECIPE | Dijon Balsamic Dressing
LEVL weight loss expert, Liz Josefsberg, loves coconut oil. In her favorite salad dressing below, she combines coconut and olive oils with fresh and dried herbs to create an easy homemade dressing. Adding coconut oil to your recipes is a great way to increase the amount of healthy fats in your diet. Get creative with your ingredients by adding bacon, fresh rosemary or honey. There are no rules! Enjoy it on your salad tonight.
DIJON BALSAMIC DRESSING
1/2 cup coconut oil, liquid*
1/2 cup olive oil
2/3 cup Balsamic vinegar
2-3 tablespoon Dijon mustard, to taste
1 teaspoon freshly ground pepper
1/2 teaspoon garlic powder
4 leaves freshly chopped basil
1 teaspoon ground Himalayan pink sea salt
1 teaspoon crushed Italian seasoning or to taste
Add all of the ingredients to a bowl and whisk to combine. Store in the refrigerator for up to two weeks. If the dressing becomes solid, take it out of the refrigerator an hour before serving.
*Coconut oil is a liquid above 75 degrees F (25 C). Below that temperature it is a solid fat and can be melted with low level heat. Liquid coconut oil can be found at your favorite health food store.
